The indicated steeping temperatures for our teas are, at best, a rough guideline. Our teas are generally very forgiving when it comes to water temperature. So feel free to use fully boiling water for any of them — they won’t become bitter or unpleasant as a result.

However, we highly encourage you to experiment with lower temperatures as well. You don’t need a thermometer — just give it a try and let your intuition guide you. It can become a beautiful little ritual, for example, to wait a few moments until the boiling water settles, no longer bubbling, and gains a certain stillness — and only then pour it over the tea leaves.

Another lovely approach is to start with lower temperatures and let the water gradually get hotter with each subsequent infusion.

Eine weniger bekannte Methode ist auch, den Tee mit kaltem Wasser aufzugießen („Cold Brew“) und mehrere Stunden oder sogar über Nacht ziehen zu lassen. Eine Variante, die sich vor allem im Sommer anbietet. Das Aroma bildet dabei oft ganz neue Nuancen – probier es aus!

Because we believe that steeping time and the desired intensity of the infusion are as individual as the person drinking the tea.

When you’re getting to know a new tea, start with a very short first infusion (under 30 seconds) and then, following your intuition, let each subsequent infusion steep a little longer (up to several minutes). You’ll quickly discover how it tastes best to you and how it most pleasantly affects your body and mind. But this doesn’t have to be the same every day—the tea is alive, just like us.

For on-the-go, you can simply brew the tea and leave the leaves in the water. Our teas won’t become unpleasant even after steeping for hours — give it a try!

In general, yes. However, the amount and effect of caffeine strongly depend on the type of tea, the water temperature, and the steeping time. Since caffeine affects people differently, we recommend you carefully experiment to find what works best for you.

If you are sensitive to caffeine, you can also discard the first two brews — most of the caffeine is released from the tea leaves at the beginning. Additionally, it’s advisable to be more cautious in the late afternoon and evening, for example by only using leaves that you have already steeped several times in the morning.

If you are very sensitive to caffeine, we recommend starting with our Moon Dew — this white tea develops especially balancing properties through its ageing process.
